This holiday I wanted to double check my work on the aFood MD recipes to make sure they were actually good and not juat something I enjoyed because it was spmetjing to eat and i was hungry.

I did not have veganaise. Oh my goodness. I pouted about it and didn’t enjoy anythibg even when i cooked later. But then the next day the salad still tasted great abd maybe even better.

But sometimes salads just seem like just random raw shut basically. Lol. Nedt holiday i think i want a totally eco zuchinni eggplant lasagne. Where would the vegan cheese come from?

We shall see I suppose.

So I timed making the recipes so I can add cook times to the recipes slowly. I was prepping for the Veganuary release of Food MD, Conspiracy Theories and Dinner Dialogue.

I made a Chia Grape Salad with: lettuce and tomato and corn, walnuts, grapes and chia seeds. Had to use Italian seasoning. It only tasted good a dag later.

Sun dried tomatoes and broad bean salad. Yummy! In theory. Without the proper dressing it’s all just grass. Ingredients: Lettuce, tomato, carrot, one whole can sweet corn, sun dried tomato with some of its oil, one can broad beans, one lime freshly squeezed, and veganaise.

Vegan Bean Salad: One whole can of kidney beans drained, walnuts, whole cherry tomatoes, snow peas chunks torn by hand, chia seeds, flaxseed meal, dates, vinaigrette of veganaise, ketchup, sugar cane vinegar and olive oil.

YUMMY gummy fruit spring rolls: Take rice paper, wet it on both sides in a plate of water. Chop, dice or slice fruits and fill. Eat with lime juice and sugar dip. Yum!

This holiday I learned how important the little things are. Many things in Jamaica are somewhat affordable. But that one or two of five imports takes your grocery buill over thei edge. Fair trade is necessary to actually svae lives here. Sorry to get preachy at the holidays. But the small thijgs make that sligt digfference in expectations being met. Not having veganaise bummed me a out able lol about theb salads noy being fully priven to be tasty because I did not recreate them fully. I would have to puvlishbwith uncertsjnty.

In any case… it was nice the nest day.
